Just as in farming, wild edibles have their own natural seasons, thus fruiting and availability for fresh product will vary based on the weather and natural biodiversity issues. While not every product is always available, there is always a wonderfully colorful and healthy array over the course of the year.
Additionally, available year-round we have our highly sought after Wild Mountain Huckleberry Jam and Syrup/Desert Topping, Bill's special Elderberry, Rosehip, Stinging Nettle and Mint tea mixes, a wide variety of frozen mushrooms and berries, naturally preserved foods, seasoning powders and more.

mushrooms are either wild foraged here in the mountains of the Pacific
Northwest, using only an ecologically sound hand picked method (like
picking an apple from the tree), or cultivated using sustainable,
organic or all natural mushroom farming methods. We honestly believe
that our cultivated Maitake and Shiitake mushrooms are some of the most
beautiful and healthy specimens available, anywhere!
Fresh mushrooms are shipped overnight to anywhere in the country, and
carefully packaged to ensure their taste, form and spirited quality.
Frozen Mushrooms
Frozen mushrooms sort of speak for
themselves - EXCEPT - we only vacuum pack our mushrooms at the peak of
their freshness, rather than older stale mushrooms. Which means that
they retain their beautiful color, body and texture. You get first rate
quality and off season availability.

Dried Mushrooms Dried mushrooms are a favorite of many
chefs. They are a wonderful way to have the gourmet flavors you love at
any time of the year, and are the perfect secret ingredient for
fuss-free sophisticated cooking. In fact, some rehydrated mushrooms are
thought to have an even more concentrated flavor than fresh ones. Alot of folks don't realize that there is a 10:1 ratio for fresh to dried mushrooms. In other words, it takes 10 whole pounds or better of fresh mushrooms to equal one pound of dried! For

Seasoning Powder Pure ground dried mushrooms for an intense flavor with minimum work for you. If there is a 10:1 ratio for fresh to dried mushrooms, then you can just imagine how many mushrooms get packed into a ground up seasoning powder! These are terrific to sprinkle on your steaks or chicken for grilling, or to flavor fish & pasta dishes, or to take a favorite soup to a whole new level. Experimenting is fun and cost effective. Jams & Syrups Wild Mountain Huckleberry Jam & Syrup Our
rich, wild huckleberries are hand picked here in the Pacific Northwest
at the peak of the season when they are plump, deep purple and a
perfect combination of sweet and tart. This is a wonderful distinctive
taste you can enjoy all year. Our syrup is not only great on pancakes
and waffles, but we like to drizzle it on ice cream and cheesecake too
- Yum!
Both the jam and the syrup/desert topping are available
in our regular sugar recipe, or our newest "no added sugar" version
made with white grape concentrate for those looking for a low calorie
alternative or with special dietary needs.
Frozen Available
in 1lb packages we offer wild mountain huckleberries, elderberries and
blackberries, as well as organic locally grown strawberries. Vacuum
packed at the peak of their season to retain freshness and form, frozen
berries are great to have on hand. Use them for smoothies, muffins,
jams or a wonderful holiday pie. Thawed frozen berries will be
softer and juicier than fresh and are terrific for recipes where the
extra juice is a plus, such as over shortcake, for crepe fillings or to
make a special sauce. Dried Naturally preserved
huckleberries and elderberries are terrific for a wide range of uses.
They can be used in your favorite recipes, with hot or cold cereals,
and make colorful and healthy teas. Dried elderberries are also used
for wine making, extracts, syrups, natural dyes or flavoring. You can

Our fresh wild greens and forest edible's are available seasonally, in limited quantities, as Mother Nature sees fit to provide. These tend to go pretty fast when we have them here locally, so your best bet for fresh items would be to call us for availability or to pre-order when their arrival is expected.
Any of these wild foods are suitable for priority shipping when fresh and several of them freeze really well. More information about freezing wild foods will be coming in a blog soon.
Additionally, the Stinging Nettle, Lemon Balm and Rosehips are available dried for use in teas, tinctures and extracts.
